    i made this ratatouille a little while ago as a vegetarian dinner and the family loved it! Will be making this again soon.

    So easy, tasty and healthy! I added a bit more of the herbes de provence to the fish right before broiling, and it was fabulous! We didn't use all the ratatouille, but I'm thinking it will be incredible in my egg beater omelet tomorrow morning!

    The ratatouille was out of this world, not to mention extremely filling and satisfying. I made the herbed goat cheese crostini on the side, and that was also very good. The snapper was decent but a bit bland, and I didn't feel like it complemented the ratatouille especially well. On the other hand, this may have been because I didn't use skin-on fillets. From how my fish turned out, I would suggest adding more seasoning. Overall, the meal was delicious and elegant, and looked absolutely stunning. Great for a special occasion.

    I'm not a big eggplant fan, but this was delicious. I made a couple of changes. First, no red snapper at the store. I tried corvina, which was a perfect substitute for snapper. Also, I added one green pepper, one jalapeno, fresh tomatoes and fresh herbs, everything from the garden. It was great. Look forward to using leftover ratatouille in an omelet tomorrow.

    This is such an easy meal and so so delicious!. Everyone ate this and loved it!
    The eggplant and zucchini were delightful. I added yellow squash for color and red onions as well.

    I have never rated a recipe before, but felt compelled. This was DELICIOUS. All of the other recipes that I have found for ratatouille use an awful lot of olive oil, so I was looking for a recipe that was more healthy. This fit the bill, and as I said was delicious. The can tomatoes that I used had diced chile peppers in it, so the dish had a nice little "kick". Definitely worth trying!!!

    I loved it! I soaked the fish in lemon water for about half an hour. The fish was light and delicious. I doubled the tomatoes in the ratatouille. Wonderful and healthy.

    This dish was wonderful! My husband and I didn't think we liked eggplant, but the way it is prepared here is delicious! Very simple and quick and it makes a huge pan of ratatouille for two people. Great leftover!

    This is definitely a keeper! It is so fast & easy, but since I made it on a weekend, I made the ratatouille after lunch and just turned off the heat and left it covered on the stove, reserving the fresh basil for when I reheated later. I really think that it helped the flavors come together better. My friends just loved it. And the fish was super easy and came out flawless. Better still, I wasn't in the kitchen the whole time my friends were here.
