    When you go apple picking in the fall and can't figure out what to do with those last few apples, this is the recipe to try! It's so easy and no need to run back out to the store for heavy cream/half and half.

    I used roasted garlic and baby red potatoes and left the skins on because that's all I had in the house. My husband finished two bowls of this before I remembered to tell him it wasn't his regular mashed potatoes. He didn't even notice.
