Holiday Rum Balls

Ingredients

  • 2 cups fine vanilla wafer crumbs
  • 1 1/2 cups confectioner's sugar, divided
  • 1/2 cup walnuts, toasted and chopped fine
  • 1/4 cup plus 1 tablespoon dark rum
  • 1/4 cup dark corn syrup
  • 2 tablespoons butter, melted

Directions

In a large bowl combine wafer crumbs, 1 cup confectioners' sugar, walnuts, rum, corn syrup, butter and knead together. Roll into 1 inch balls and then into remaining confectioners' sugar. Arrange rum balls on a baking sheet, cover well with plastic wrap and let sit for 48 hours.

    There is just over a quarter cup of rum for the entire recipe; if you sat down and ate the entire batch by yourself you'd... probably get a little tipsy (though offset by the amount of food you ingested). But anyone who claims they're getting intoxicated from eating one-two of these things is exaggerating enormously--or is a tee totaler in which case they probably shouldn't be eating the things on principle.Read more

    First time using this recipe. Easy and excellent. I used light corn syrup instead of dark, which was just fine. And, there... was no need to toast the walnuts; worked just fine the way they were. I also put MINI CHOCOLATE CHIPS in them. It gave them a a little extra crunch and taste. They tasted like chocolate chip cookie dough with a bonus of rum flavor! I ate most of them myself, but what a nice addition to the Christmas cookies I gave away. Just be sure to warn the recipient because you can "feel" the rum. I used Captain Morgan spiced rum. It was delicious. I will definitely make these every year. YUMMY!Read more

    We love these! This year we made them 3 ways for inclusion in our holiday cookie gift tins: 1)Spiced Rum (Cpt Morgan) with... added cinnamon, nutmeg & cardamon 2) Coconut Rum with added shredded coconut mixed into the balls 3) Pecan & Bourbon - no walnuts nor rum, instead used roasted chopped pecans & Makers Mark Bourbon. These are a hit with our crowd... And so fast & easy to make. I roll them in powdered sugar the next day to make them pretty and then store them in the fridge until serving time.
