Rub the sides of a bowl with garlic, then discard. In bowl whisk together mustard, honey and vinegar. While whisking, slowly add olive oil. Season with salt and pepper.

    I love this recipe! I make mine with roasted walnut oil instead of olive oil. However, I have a question regarding storage...does this have to be stored in the fridge or just a cool and dark place?
    Made it for my wife last night (but with Balsamic and 1/2 the oil) with a spinach salad with apple walnuts and goat cheese. She loved it. In the future I would add a small amount of shallot because I think it may make this recipe even better.
