Mix the dry ingredients, chopped onions and cut corn. Combine the eggs and buttermilk. Add buttermilk mixture to dry ingredients. Stir well. Use a tablespoon or your hands to form patties. To enhance flavor, deep fry patties in the same oil that was used to fry fish or use 8 ounces of vegetable oil heated in an iron skillet to 350 degrees.
