Absolutely love this recipe! The dressing has become my favorite, and I make it to keep on hand for any salad. Sooo Good!!!

Great dressing! I made this with a blend of arugala and baby spinach. Didn't have mint, but it didn't need it. I could eat the dressing all day. I think next time I might add fresh mushrooms and grape tomatoes to the salad. Watermelon was a perfect complement.

Delish! Made this for a summer dinner party. Everyone raved about it- loved the combination of flavors. We had this salad along side of Ina's corn salad recipe and some grilled filet mignon and shrimp. So easy- will definitely make again!

Very interesting and yummy salad. My husband didn't know I had made this salad (we had a big group over and said "Whoever made that salad with the mint, it was fantastic!" So do not skip the mint. I don't really like mint, but in this it IS fantastic! Thanks Ina!

Made this last night for the family and everyone (kids included loved it! As always, made minor adjustments based on "what was in the fridge" and it worked out nicely, though probably cooler with a little less bite. When food processing the dressing, I subbed fresh ginger for the shallots, pineapple for the orange juice, and added avocado with a little more oil. So good--will definitely be using this recipe again throughout the summer :! Thanks!
