This salad is so refreshing and delicious. I use a light olive oil in the citrus vinaigrette which IMO keeps the vinaigrette from being overpowered by the oil. I think if you don't like arugula and/or mint, you could leave those ingredients out (use mixed greens as a sub for arugula but I wouldn't sub anything for the mint. There are many kinds of feta cheese (e.g., some very strong, some very salty, some mild and nutty flavored, etc. You just need to find one you like. I serve this salad year round.

I've tried many watermelon salad recipes and all are variations on a similar theme. Among them, this is one of the very best. A keeper.
Three notes:
1 - Prefer less olive oil in the dressing than recipe specifies for fresher, more citrus forward flavor.
2 -Prefer to toss the vinaigrette with all EXCEPT the watermelon and then gently toss it in at end. It keeps the watermelon more fresh tasting in my expeience.
3 - The peppery arugula is a key component here. If you sub mixed greens or spinach it will not be the same, imho. With all respect to those who say they have done this, iIf you leave out the arugula, consider adding a peppery element to the vinaigrette, like a little minched fresh serrano pepper.

Ina spoils us all with outstanding recipes. I served this for a group of ladies the other night and everyone fell in love with this salad. I followed the recipe exactly and it was perfect. I did us paper towels and blotted the watermelon before adding it to the dish. The combination of everything works so well together. Also, I made the dressing a day ahead to save time and it was perfect.
I am going to make it again this weekend for a dinner party.

My whole family loved this recipe. I didn't add mint, personal preference. I also used a mix of baby greens instead of arugula.

Finding FRESH MINT in VT in the winter was a bit of a challange. What little bit I was able to purchase didn't look like it would add anthing to the look of the salad. So I added it to the dressing by putting all of the ingredients in the blender. My company raved about the dressing and the salad.

This is a really good salad. I'm not a big fan of arugula, however, so I used baby spinich instead. It turned out beautifully. Everyone loved it.

Really good summer salad. Although it is November I made it anyhow...it was a warm day and was a perfect salad.....very refreshing. The mint and watermelon did the trick. The feta was a good contrast to the fruit and the hint of mint in every bite was heavenly. I ate the leftovers the next morning. Ummmm...ummm. Tnx Ina.

I made this salad for my husband and I for dinner along with grilled salmon. We both loved it.
