    This salad is divine! I add a couple of soft boiled or poached eggs on top and it makes a delicious lunchtime salad.

    Love this simple salad with just about any main dish during the spring and summer! I do reduce the oil and salt per our household's taste, and the quality of your oil really does matter with this one, so we use the good stuff. Halved cherry tomatoes (or fresh herbs are a nice addition if you want to mix it up a little.

    Delicious, but I had to reduce the salt in the dressing a little for subsequent batches. ALWAYS keep this dressing in the fridge now - have not bought dressing in a long, long time, using this dressing for everything tweeking with herbs, ginger, etc. to vary.

    I learned to love Rocket in France. They prepare it very simply, too. This is a delicious salad eaten by itself or as a side with any protein.

    IF YOU LOVE ARUGULA (AND I DO DRESSING IT WITH LEMON IS JUST THE BEST. IN FACT, I OFTEN JUST USE LEMON AND A SPLASH OF OLIVE OIL AND FRESLY GROUND PEPPER. THE ADDITION OF PARMESAN IS DELIGHTFUL AND CERTAINLY AGREEE WITH OTHER REVIEWERS THAT THE QUALITY OF THE EXTRA VIRGIN OLIVE OIL (AND THEY ARE NOT ALL THE SAME! IS KEY - AS IS USING THE 'REAL' PARMIGIANA'..... A LIGHT SALAD WITH GREAT TAST. INA SHOWS US THAT EVERYTHING DOES NOT HAVE TO BE COMPLICATED TO BE GOOD.
