    I have not found it worthwhile to make homemade sweet potato fries until now! I always leave the skin on when making home fries as I like the skin, healthier and crispier.I gave these a try tonight and made it as written. They were the best ones yet. Our local paper claims that Ore Ida makes the best frozen version and up until now I resorted to just making those since the homemade version wasn't that good. Now I will make these they are great! I placed them on a lower rack in the oven at the end, and turned on the broiler for a few minutes just to get them little crispy. Ina never fails! She is the best!!!!

    This recipe is AWESOME !!! Easy and went well with Sticky BBQ Ribs.

    Very interesting, I would recommend using 2 7-8 oz sweet potatoes. I had one smaller sweet potato so I adjusted the olive oil.

    My sweet potatoes did not crisp up. They were soggy and droopy. Maybe there are different types of sweet potatoes with less moisture. Mine were a flop.
