    Great Banana Muffin recipe. When I looked over the ingredients, I said to myself, I need to make these. The granola, coconut and walnut topping were a great addition to this recipe. I too, left out the dried banana chips for the sole reason that it might be a bit overkill. The muffins were moist and the banana flavor was evident, yet perfectly balanced with the topping. The coconut was a tastefully great ingredient and would strongly suggest not omitting it. The recipe yielded exactly 18. I had enough for the family and my co-workers. They were a hit.

    All the add-ins add great texture to the average banana nut muffin. I made my own granola, with almonds, which added nicely to the flavor. I only topped the muffins with granola and not the coconut, walnuts or banana chips. I felt it might be too much. I was able to make 29 standard muffins baking them for 23-25 minutes. This recipe is a keeper!

    These muffins were delicious! My husband said they were the best muffins he ever had! I even substituted Truvia for Baking in place of regular sugar...1 cup truvia = 2 cups regular sugar. I didn't have the dried banana chips to top with but they were still delicious! The sweetened dried coconut and the walnuts all marry together so well with the other flavors! This would also make delicious banana bread.

    Fabulous muffins- light, fluffy, delicious. My only change for next time would be to use a little less sugar. The banana and coconut add enough sweetness of their own that the full amount of sugar isn't needed. Otherwise- delicious! Will definitely make again.

    I made these muffins today with Alton's granola recipe. They were wonderful and so moist. Definitely a keeper. Planning to do this for an upcoming party. Thanks Ina. U r the best.
