    These muffins are delicious....BUT I used cooking spray instead of muffin papers and they will NOT come out of the pan....Had to eat these with a fork right out of the muffin tin! : Also, I crushed up some granola bars I had in the snack drawer and they worked just fine! Super sweet....but super yummy!

    These are easy to prepare and taste great! Very moist with a slight crunch on top. I halved the recipe and it made 12 large muffins. Perfect after school snack for my son.

    I have never felt moved to review a recipe before but these are so good I had to write in! The crunch on top absolutely makes them the best ever! I love the coconut and I even sprinkled in some chocolate chips to make them even more decadent!! I also reduced the amount of sugar (the bananas and coconut are so sweet already! and often I cut the recipe in half and it makes 12 regular size muffins (I think she means 18 jumbo muffins with the full recipe.

    Best muffin recipe. The crunch makes it. I use pecans, as I am allergic to walnuts. These are a hit with all who have tried them.

    These muffins are the best ever! I didn't garnish the top because I thought there already was enough stuff in the muffins themselves. They were delicious! I made jumbo muffins and the batter made 10. I baked them for 10 minutes more and they were perfect! Next time I might try putting the garnish on top that Ina suggested but they are wonderfully delicious without. This recipe is definitely a keeper and this will be my go-to muffin for friends and family when they come to town. Thanks Ina!

    Best muffins ever! I always 1/2 the recipe and it makes a dozen regular sized muffins and six mini muffins. The only problem I have with the recipe as written is that I never, ever fill muffin cups all the way to the top...filling them 3/4 full is perfect (in this case I just use a 1/4 measuring cup full for each muffin.

    For 1/2 recipe I use 2 very ripe bananas, 1/2 cup coconut and 1/2 cup granola (in a pinch I have used 4 crunchy granola bars ground up in the food processor and they are a very good substitute, although if you do this definitely cut down on the sugar.

    Throw away your other muffin recipes. This makes the best muffins ever!Have made it several times, adding different toppings. The Barefoot Contessa makes the most consistently good recipes in my opinion.

    Loved these, but................. way to much sugar and butter. Halved butter and replaced with applesauce. Also halved sugar and they were still plenty sweet and very moist. Will definitely make again, reducing both butter and sugar a bit more again.

    Excellent muffins by far my favorite ever. I added my own homemade granola,coconut,walnuts in the mixture. I only had two banana's so that is what I used. I topped them off with more homemade granola. I was able to get 18 very large muffins. Next time I will make smaller muffins so it makes more. Thank you Ina for another fabulous recipe!
