Beets are not my favorite however, with this recipe I find myself returning to it time after time. The oranges tone down the beet and they each compliment. The vinegar adds a whole new dimension and together this salad is one of my favorites. I also take some of this salad and add it to a garden salad to rev it up!

Beets, eww! That was my 1st impression when I was a kid and unfortunately never ate them again until now. Thank you for this recipe. The oranges and red onion cut through the strong beet taste. The recipe is delicious and is now part of my recipe box. :

I microwaved fresh beets. 1/2" cubes for 4 minutes. This is a fresh, new way to eat a healthy vegetable. Delicious!

Ina - love you...but this one makes a huge amount.
I would definitely cut it in half...and think of it more as a garnish than a side.
Also spent bookoo $ on raspberry vinegar (really got a great one with pulp...yummy - but felt it was lost in the salad. I added a drop of balsamic - which I would recommend over the raspberry.
And peeps...I LOVE beets. This is just way over the top in terms of the amount of them. You're not preparing for a restaurant.
P.S. You might want to try adding goat cheese before serving - or feta as another reviewer suggested. I tried both. (Wish I had had blue cheese as someone suggested...I think that would be the perfect compliment.

Frankly, I really dislike beets. However, my husband loves them. With the combination of beets and orange, thought this just might be the recipie to convert me and it worked! It's not only tastey but beautiful. If letting the beets marinate, you may want to add the orange zest and orange sections at the last minute so they do not turn colors. Another great, easy recipie from Ina!

I really liked this salad. I must've zested into the white part of the orange because it got a little bitter but that's my fault. I'll make this again and be more careful next time. Also, I bought the raspberry vinegar for this recipe and then relaized I had some orange/champagne vinegar from Trader Joe's which would've worked great also. I added a little crumbled blue cheese on top which was a nice touch. Feta would work good too. This would be good on a bed of arugula. Yum.

I used fresh beets and roasted them at 400 for 40minutes. I also did not know how to zest an orange so i went on utube and learned how to and how to take out the orange slices without the membranes. OMG. how amazing. This was the best Salad ever. It's such a colorful dish too :

At first when I read this recipe I thought this was a strange combination of ingredients but loving beets the way I do I gave it a try. I am so glad that I did. What a wonderful flavor, and a beautiful dish. I will make this many times in the future!

This was such a different way with beets. Impressed my family. Would have had 5 stars if I'd used fresh beets instead of canned. Will do that next time.
