While delicious as made.. forgive me Ina.. I had to lighten these up. For the butter, I sub 1 tub of applesauce and 1/3 cup of smart balance. 1/2 c of sugar and 3/4 c of splenda for the sugar. Sub 2 whole eggs and 1 white for the 3 eggs. I use low-fat sour cream. (NO fat free! I use 1/4 c skim milk. For the flour.. I sub 3/4 c of wheat flour for the white flour. Also, before adding the blueberries, I divide the batter in 1/2 and to 1/2 I add chocolate chips instead of blueberries. My oldest abhors the thought of blueberries (go figure! so it's a little treat!

I love these, of course I love all of Ina's recipes. I used plain low fat yogurt in place of sour cream and they were delicious! The first muffin that I did not need to put butter on, so moist.

These are the best blueberry muffins I have ever tasted, let alone made myself. They are moist, great texture, not too sweet and hard to stop eating. Ina is the best.

After I took them out of the oven, I couldn't get my hands off them. They definitely were not as tasty the next day. They seemed to get greasy. These are not a good baked good to make ahead of time. Definitely serve them fresh for brunch or breakfast.
