Ingredients
  • 1 head garlic, peeled (about 16 cloves)
  • 1 cup good olive oil
  • 1 teaspoon crushed red pepper flakes
  • 1 teaspoon kosher salt
  • 4 stalks broccoli, cut into florets (8 cups of florets)
  • 2 tablespoons soy sauce
Directions

Put the garlic cloves and oil in a small heavy-bottomed saucepan. Bring to a boil and cook uncovered over low heat for 10 to 15 minutes, until the garlic is browned and tender. Turn off the heat and add the red pepper flakes and 1/2 teaspoon salt. Immediately pour into a heat-proof container to stop the cooking. Allow to cool to room temperature.

For the salad, blanch the broccoli florets in a large pot of boiling salted water for 2 to 3 minutes, until crisp-tender. Drain well and immerse immediately into a large bowl of ice water until the broccoli is cooled. This process stops the cooking and sets the bright green color. Drain well.

In a large bowl, toss the broccoli with 1/2 teaspoon salt, 1/4 cup of the oil used to cook the garlic, the soy sauce, and 8 or more cloves of cooked garlic. Taste for seasonings and serve cold or at room temperature.

This recipe turned out so good I subbed the red pepper flakes for sesame seeds it gave it a savory flavor. It made the house smell like my kind of heaven also while I was browning the garlic in the oil I tossed in about a 1/4 cup of diced onions. In the end I used the last 1/2 cup of oil to make my stir fry which turned out super taste even my anti veggie eater enjoyed it thank you so much for posting this recipe instant family favorite item not reviewed by moderator and published
Just perfect! My husband and I love broccoli and garlic and soy sauce. Putting them together never crossed my mind. This is delicious. Wish I had made more. Having tons of fun with the infused oil; Brushed on individual bread loaves before baking; with some good balsamic to dress warm beets and leeks....the possibilities are endless. THANK YOU!!! (in a small sauce pan, my induction stove had the oil "boiling" not a rolling boil, but a gentle sputtering at 2 1/2) item not reviewed by moderator and published
This recipe has a huge mistake. Olive oil boils at 570 degrees. You don't even deep fry that hot. The recipe is probably meant to say, "bring the oil up to ~220 degrees when the garlic begins to sizzle." Then take it off the heat and let it rest for 10 minutes. Garlic is "brown and tender" after about 1 min of saute. Burned garlic is just yuck. The editors should check with Ina for a clarification. item not reviewed by moderator and published
I did not like this at all and I am also usually a big Ina fan. It just did not work. I watched the episode and she is clear that the sauce adheres better to the broccoli if the broccoli is dried a bit. I did that, but to me it tasted like oily broccoli with garlic. I won't make this again. item not reviewed by moderator and published
Ina is my first go-to for recipes. Prior to making this recipe I read all 36 reviews. I followed this recipe exactly and was horribly disappointed with the taste, much less the time and labor to prepare. I hope to salvage the garlic infused oil for something but the broccoli tasted awful. I have never in my entire life thrown away food unless already spoiled, but my husband and I agreed this was not edible for us. I cannot understand how other reviewers consistently rated this five star. I regret posting a one star on an Ina recipe, and have never before rated a recipe one star. I did not deviate from the recipe so I cannot claim responsibility for messing up. We wound up having Cheddar cheese and whole wheat crackers with wine instead. item not reviewed by moderator and published
Amazing! Excellent side dish. Just go light on the salt since the soy sauce is so salty. item not reviewed by moderator and published
OMG!! This is absolutely fantastic!! I am taking it to a Labor Day picnic today. I couldn't stop eating it. I have to save the rest for the guests. I will make this again and again! You will not be disappointed!! item not reviewed by moderator and published

This broccoli is really delicious and easy. We appreciate the fact that it's lighter than the broccoli salads that include mayonnaise. And it's great that it can be prepared in advance ! item not reviewed by moderator and published
How easy was that? Sauce in the time it takes to steam broccoli. Totally rocked! Was looking to change it up a bit as a side with salmon. I added a splash of sesame oil. item not reviewed by moderator and published

Three of my favorite ingredients!! This was awesome! I omitted the salt when putting this all together and did what the recipe said, to only add 1/4 Cup of the garlic oil to the broccoli, so it was not too oily at all. Yum! item not reviewed by moderator and published
So yummy! Actually I couldn't stop eating this and ate three full heads if broccoli at once. Love it! item not reviewed by moderator and published
Made this for Mom's Day today. Absolutely yummy! Didn't have garlic cloves, so I made 1/2 the batch of garlic oil and used 8 tsp of jarred/minced garlic Then slowly heated the oil to infuse, poured off 1/4 cup of the oil only (used later on bruschetta), and saved the rest of the oil and all the garlic bits for the broccoli. Added the salt and red pepper- and used as directed. My family just couldn't get enough! item not reviewed by moderator and published

I love Ina. This recipe is so simple and so delicious. All my guests wanted the recipe. I will make this again and again. I might try it with string beans and asparagus. DELISH! Just be careful and watch the garlic so it doesn't burn and do add the garlic to the final dish. item not reviewed by moderator and published

It's delicious but recipe uses 1 cup of olive oil yet the directions are to only use 1/4 cup on the broccoli. Is this a misprint? item not reviewed by moderator and published
My daughter, who hates broccoli, even ate this dish up. The whole family complemented the cook, Dad. It is very good, try it! item not reviewed by moderator and published
I made Ina's book version (without the soy), and it still came out tasty and great, with the addition of a little more kosher salt to heighten the flavors. Excellent, would love to try again, thanks!!! item not reviewed by moderator and published
Many people like their vegtable to have some crunch, we don't so iicooked the vegteble first. My timing was a little off so my main meal was not done when my broccoli was. The result was letting the garlic and oil go a bit longer than directed. The result was that the garlic turned a bit bitter. no fault of Ina but mine, just a bit of advise. Very good recipe. Enjoyed it ! Definitely a keeper! item not reviewed by moderator and published
This is a great recipe. There is way too much oil. I cut it by over half and it was still too much. Barbara Houston, TX item not reviewed by moderator and published
Absolutely the best broccoli dish I have ever made! The entire family loved it. I did not have whole clove garlic, and used the chopped garlic you find in the produce section instead. This was awesome and I will make it again! item not reviewed by moderator and published
I needed a side dish for a fish and pasta buffet. This was perfect. It held well at room temp and delicious leftover the next day.
