This dish was crazy good! It's hard to believe that so few ingredients can create such a fantastic, strong flavor.

This is a great side dish. I used less basil, halved cherry toms, and white wine vinegar, brought it to a church picnic, it was the first dish to run out. It's a great way to use fresh stuff from your garden.

The perfect rice salad. I added 1/4 cup toasted chopped walnuts to this. Delicious!

I've never cared for brown rice until I met this recipe! It is chalked full of flavor with just the right amount of tanginess. I doubled the rice, cooked it in beef broth, then left the other ingredients as stated in the recipe. Yum!

This was the perfect dish to serve a large group of people with varying diet restrictions (2 diabetics and 2 vegans. Since I was serving diabetics I did leave out the sugar, and I didn't measure salt, I just added a little bit to taste, but the end result was delicious. It was so good, so easy, and was a great way to use up some of our homegrown tomatoes that I will be making it again soon!

My husband and I LOVE this dish. Great for a potluck because it's best at room temp or just out of the frig. What a great use for the fresh basil and tomatoes from the garden. I followed the recipe to the T and it was GREAT. Thanks Ina!
