I thought these were great appetizers, but I found myself snacking on the leftovers the next day!

Served this at my daughter's birthday party and everyone loved the great taste combination of the peppers and cheese. Easy to prepare--will make it again for sure.

I made this for a girl party and boy was this a hit. I made 24 slices among 5 girls and they were gone in minutes. Great taste and easy to make.

For reviewer looking for a different cheese, goat cheese can easily be exchanged for blue. For a bigger change use feta and switch out minced olives for capers and oregano or mint for the basil. Enjoy!

I tripled the recipe and made it a few days ahead because of time constraints. There was a great price on red, orange, and yellow peppers, so I used them all -beautiful! Also - I'm a huge fan of gorgonzola so the taste was not too strong. The day of the party, I warmed it in a covered baking dish and served it with the toasted bread on the side. It was quite a hit. The party was a bridal shower & I gave the bride the recipe as part of her gift - she thanks you, Ina!

My boyfriend doesn't like blue cheese. Could someone recommend another cheese to use instead. Maybe Fontina? Thank you!
