I used chicken stock instead of water, 3 large Fuji apples instead of macintosh(sweeter, and two sweet Maui onions instead of 3 yellow. It was sweet and full-bodied, a definite keeper. My 18 month old loved it, too!

Hi,
I read the review about this being bland so I made a few minor changes and it was really good. I substituted the water for 2 c. chicken stock. This made the soup richer and more flavorful. I also added about 1/3 c of sugar. It needed this to balance it out and bring out some of the sweetness in the onions and squash. I also added a splash of cream for richness and I think it is now perfect.

as always, Ina's recipe was easy, with ingredients easily available and great flavor. Can't wait for her new cookbook!

I've loved every receipe from Ina so far but this one- the curry was WAY too much. I like curry but this gave me heartburn for hours. Cut out the curry and add a little sugar and it could be really good.
