    Roast squash only until soft, try not to brown. Add cooked squash to food processor, add about 1/2 cup half and half, and puree until consistency of mashed potatoes. Delicious! Everybody at our dinner party wanted the recipe.

    My first time cooking butternut squash and my husband and I are now huge fans! I don't usually like sweet side dishes so I was prepared not to like this too much, but the flavor was so interesting and complex that it won me over. I think the pepper is key in this recipe, I used fresh ground black pepper and it cut the sweetness and intensified the nutty flavor of the squash. The recipe was super-easy and you can definitely throw it together with very little effort . . . just be careful cutting the squash, it is really difficult!

    This is sooooo good. I actually crave this and have added this recipe to my Thanksgiving and Christmas menus. There are never any leftovers.

    I made this for a dinner I had with 5 friends, and we all loved it. I am making it right now again for a family dinner. Butternut squash is hard to cut, but definitely worth the effort! We like it better than yams. :

    Tonight I served Ina's Caramelized Butternut Squash with turkey breast cutlets. This is the third time I've made this recipe in two months...my husband and I just love it! I added chopped walnuts and Craisins and the squash tasted even better. Thanks for such an easy and yummy recipe, Ina!

    I just made this tonight and my family absolutely loved it. I did reduce the amount of butter and brown sugar a bit to save on calories and fat, and it was delicious!
