I've been making this amazing carrot cake for about 3 years now. I like to use golden raisins and also add 1/2 C shredded coconut. Someone always asks for the recipe. So moist and delicious!

one of the best carrot cake recipes ever!! accidentally put in only 1 cup of oil but turned out to be fine. love love love the texture and sweetness is just right! wouldn't change a thing.

OH MY GOSH!!! lovely cake, very moist. I made it the first time with the exact same recipe, the second time i made it with a few alterations, I used only 1 cup oil, 1 cup crushed pinapples, 3 tsps cinamon, 1 tsp nutmeg & 1 tsp cloves best carrot cake i've ever made!!!! It's a must try!

I have made this cake a number of times and each time it is great. I wonder if Ina knows just how wonderful she is? I have never used a recipe of hers that was not terrific. I thank her as well as my family and friends that I cook for. Ina I would'nt want to do it without you!

I made this cake more than once last year and plan to do it again today. I have noticed that the cooking time is varied, so check after an hour to make sure it is done. I use two 9 inch cake pans, but it still takes an hour. I only make half the frosting as it is more than enough. I only make it when I have a crowd because it is very rich and delicious and I would eat it for breakfast too if there were leftovers.= Definitely a keeper!!
