    i first made this cake for my boyfriend's birthday and everyone absolutely loved it! I have made it about 8 times since then because everybody keeps wanting some! i highly recommend this recipe! the only thing i changed was the chopped pinapple for crushed. dont be scared to try it!

    I read the reviews. I decided to cut the recipe in half. Also used 1/3 cup of oil and 1/3 cup of applesause. I added more spices. When I put the can of pineapple in a strainer. I put the raisins in a bowl so the pineapple juice would cover them and they would be plump and take on some added flavor. This is a great cake. Thank You Ina. I feel the next day, the flavors mellow together. I can not wait till tomorrow.

    I agree with many of the other reviews, in that, 1 1/3 cups of oil seemed to be too many and also that some nutmeg would add to the flavor. I also felt that the recipe made a generous amount of delicious frosting. SO, I adjusted the oil to 2/3 cup and added 2/3 cup applesauce. I also added 2 tsp ground nutmeg. Finally, I equally divided the batter into 3 8in. rounds and baked for approximately 45 min. I enjoyed it as a triple layer more than as a double layer. It just seemed to have a better distribution of cake to frosting. Also, when I made this, I used a small can of crushed pineapple, drained. Don't be afraid to make this cake, it is FABULOUS!!!

    I saw this being made one the show and thought I would make it. It was so easy to make and EVERYONE loved it. Even those who do not care to much for carrot cake. Thanks

    I'm an excellent cook but not much of a baker. This is the best cake I've ever baked in my 65 year life and my husband says it is the best ever!

    The frosting is so smooth and delicious! I tried the cake recipe exactly as it was given. However, for some reason the raisins ended up having a strange bitter flavor. I may have done something wrong. Next time I think
    I will omit the raisins and add more pineapple. Thanks, Ina, for sharing all of your recipes with us!

    I made this by request for a birthday celebration and it did not disappoint. I did replace 2/3c of the oil with applesauce and added nutmeg, as prior reviewers recommended, and it came out super moist. Fairly quick and easy to make, especially if you have a Cuisinart to do the shredding!
