    It's as good as carrot cake gets. I made a glaze with a little cream cheese instead of the richer frosting, and it was still a wonderful dessert. I can even pretend it's healthy!

    I made this for an extended family dinner, and it was received with rave reviews. The cake was moist and very flavorful. I don't care for walnuts, so I just omitted them. The raisins and pineapple added the perfect amount of sweetness and texture to the cake. The frosting was creamy and complimented the cake deliciously. My only problem arose with the cooking time of the cakes. I set my timer for 55 minutes (at 350, and the cakes were a little burned on the bottom, and stuck to the greased cake bans a bit. Next time I will check the cakes at 45 minutes.

    This cake was fantastic. My family raved about it - said it was the best carrot cake they'd ever had - and my husband even requested it for his birthday in lieu of anything else! This is definitely a keeper.

    I made this cake for company and sent some the next day with my husband to work. This is the best carrot cake that I and all those who tasted it have eaten in a long time. The ingredients blend together so well that I was asked 'did you forget to add the carrots?' Some of my guests were from Africa and had never eaten a carrot cake. Men love good cooking and Ina, I know one reason why you and Jeffrey have been married for 39 years. Keep making those delicious dishes lady!

    I made this cake for my friend who LOVES carrot cake and gets raves about her own recipe. I was hoping it was up to the challenge. She called me and absolutely raved about it. Had thought it strange there were pineapples in it but realized they made it all the more moist. To die for.

    I made no changes to the recipe and I don't regret it at all. Sure the frosting was very rich, but it's a nice treat for every now and then. Definitely a keeper!

    made this cake for work as muffins with the frosting on the side (for those watching their figures and it was a hit!!!! the muffins were gone before days end and people were eating the frosting by the spoonful! (even those watching their figures had to try it!

    This is the first cake I have made from scratch and it was delicious! I didn't have parchment paper to line my cake pans but I just greased the pans and the cakes came out fine. It turned out so well I baked it again and fed it to my college friends!

    Simply the best! I used store bought bag of grated carrots and canned pineapple and I used golden raisin....make sure they are plump.
