    I loved Ina's carrot cupcakes. I added
    pineapple to mine. I was hoping she would make them into a cake. How wonderful is that? I love Ina and Jeffrey.

    Ina Garten! I thought that I made the best carrot cake ever, but this is an outstanding recipe. This is the "rolls royce" of carrot cakes, and I have baked many. For the reviewer who wants to know if you can use canned pineapple-of course you can. I used canned pineapple chunks and diced each piece. Thanks, Ina, for sharing this treasure find; you are a fabulous cook (I've tried many of your recipes and an example for us who cook at home.

    I have been looking for the perfect carrot cake recipe, and I have found it. Look no more, people! The cake was moist and had great texture, especially with the pineapple and nuts. The frosting was simple and ot was the best cream cheese frosting I've ever had. You can't go wrong with this one. Ina, you are the best!

    Very easy cake to make from scratch! To make it easier try a pre-made butter cream icing from the grocery store.

    Fantastic recipe. I didn't have the pineapple but the cake was still moist and flavorful. I did add a half teaspoon of nutmeg to the batter and upped the creamcheese to a full pound and increased the vanilla and powdered sugar to get even more frosting. It was a hit. Thanks!

    This cake was a definite hit when I tried it out at a Church dinner. There was nothing left but the cake plate, with several requests for the recipe! The cake is very moist! I added chopped nuts to the frosting for more wow!
