    Absolutly deliciouse and moist,!!! Made this cake in three 8inch cake pans and added one cup of coconut one 20oz can of crushed pinapple that i drained and saved the juice then rehydrated the raisins in the pineapple juice.... This recipe does make a huge cake... I will definitely Be making this cake for Easter this year :

    This is the best carrot cake ever. However, since we are not sweet tooth people, instead of two cups of sugar we added just 1/2 a cup, and for us came up just FANTASTIC. With the icing and fruits it was sweet enought. Thank you, thank you for this wonderful receipe. Loooove it.

    This is the best carrot cake I have ever make. All of that goodness in one cake, this cake was gone in no time. The only this I twicked is the the frosting, since the cake was sweet due to all the goodness that was there i use half a pound of confectionary suger in stead of a whole pound. The only down side to this receipe is that I usually work with cups and tea spoon/table spoon not pounds, for the once that need a bit help here it is, I had too google it since I dont have a scale.

    carrots if small then about six.
    1 ld= 16 oz.

    This is the best carrot cake I've ever had! Every time my family gets together they always ask me to bring it. Such a keeper, didnt change a thing!!!

    This is THE best carrot cake I have EVER had. I can't believe how simple it is to make and the result so far exceed my expectations. I've added this one to my all time favorite recipes in our family cookbook.

    I made this last night! It was great nice and moist. Does anyone know why it just calls for baking soda only, not any baking powder like other recipes? I am a novice baker, but I am curious.
