    Oh my gosh....this is the BEST carrot cake I have ever made. I used cake flour which made it light and airey. I also made an additional 1/2 recipe for the frosting but, we like our cakes with lots of frosting. It was an easy cake to make and will be one I will use over and over again. Make this cake, you will love it!

    Best carrot cake EVER!!! Thanksgiving this year I wanted to make something different and mix up the menu, I ended up choosing this cake and it was an awesome choice. My family couldn't get enough of this cake, it was perfect! The only thing I changed was using canned pineapple chucks (squeezing the juice out first and not adding raisins, the cake was so moist and flavorful.

    Love It! and so does Every one else!
    Time after time, I make this, not too difficult, hard to mess up, and Such a crowd pleaser. Everyone asks for the recipe, the only thing I swap in is craisins.

    I love carrot pineapple cake and this is among the best I have ever had (and definitely the best I have made! Thank you Ina, it was such a nice surprise for my husband for his birthday cake! Delicious and I followed the recipe exactly.

    Best carrot cake I ever made and had ! Received many compliments and recipe requests over the years. I am so glad others have metioned the 9x13 pan idea and cooking time as I would love to make it for a larger pot luck\party crowd. This is another Ina Garten keeper, love her recipes and decorating party ideas !!!

    I made this cake for a friends birthday and it was a hit. It was extremely moist and delicious. I used can pineapple tidbits instead of fresh and I baked the cake for 40 mins because any longer than that would have created a dry cake. I have made this cake 4 more times because my friends and family just luv it, making it for thanksgiving. Great Cake !!!!!

    Ina's recipes are usually perfect, but this one needed some help and almost caused me to run to the store to buy a cake.

    I don't know if the problem was the dry weather in Colorado or what, but when the batter was mixed with the carrots, raisins, pineapple and nuts, it was so dry that I couldn't have formed a cookie with it, let alone poor it into a cake pan. I'm usually a good cook and baking cakes from scratch is nothing new. (including all of the high altitude conversions I have to make I decided to make a "hail mary" last ditch effort to save the cake and added about 1 cup milk. I was sure that it would never rise and if it did be really tough from all of the mixing, but it turned out perfectly. The strangest thing is that I ended up having to do the same with the frosting. I only added about 3/4 of the powdered sugar and still had to add some milk to get a spreadable consistance.

    I'll make it again, but continue to add the milk.
