I made this for a friend's birthday after he told me his mother used to make him carrot cake for his birthday. This seemed like a nice change, and he loved it, as did many people in the office. His girlfriend asked me to make a tub as tall as her full of frosting for her birthday! Great way to take a traditional dessert and make it new.

My husband took these to his work and everyone raved! Comments included best carrot cake ever and perfect frosting. I definitely agree, don't cook them as long as it says. I took off about 15 minutes from the original recipe! Enjoy everyone, they're fabulous. Thanks to Ina!

These cupcakes turned out perfectly! So delicious and yummy! I followed other readers' suggestions and reduced baking time. For my electric oven, I found that a baking time of around 25-27 minutes was sufficient. Thank you Ina for this recipe, you are the best!

well after 17 minutes on 350 degrees F, I smelled some burning, so I ran to the kitchen and took the muffins out, half were burnt and half were still gooey!? I dont know if it was my oven or the pans, but Ive made muffins /cupcakes/ cakes in it before and never had this problem.
I'll try again, they smelled good and the batter was good. hmm, oh well.

We loved these. Made two 8-inch round cakes because we couldn't find our muffin tins - they came out perfect. We followed the recipes exactly, except i took out the cakes 5 mins early because other reviewers said they had problems with burned bottoms, but i don't think they would have burned if i had left them in for the full time. The cake was perfect and the frosting - i could have licked the bowl if i didn't know how much butter and cream cheese went into it :

I find these so easy to make. And I've received many birthdat requests for these cupcakes. I do agree with the other reviews regarding cooking time. I always end up taking them out 10 or 15 minutes earlier than what the recipe instructs. I just use the toothpick test to determine doneness.
