    I love this recipe, and have made it several times. It is wonderful with a leg of lamb, but equally as yummy with baked chicken!
    The gruyere is fabulous, however some think it's strong, so I've replaced the gruyere with a nice sharp white cheddar with great results.

    I've added carrots (parboiled. Excellent recipe for those that don't normally like cauliflower (me. You could add green beans or crisp pancetta as well but it is a fairly rich recipe as others have noted below. I love it though!

    I'm not a big cauliflower person; has anyone tried it with broccoli, or any other type of vegetable? I'd love to know the result! Thanks

    What a wonderful way to get the family to eat and enjoy cauliflower! The dish is simple and wonderfully delicious. My grandson turned his nose up when he was told that it was cauliflower, but hesitantly agreed to try a small spoonful on the condition that he wouldn't have to finish it if he didn't like it. He tasted it and tried to make a disagreeable face, but then finished it and asked for more. I used Swiss cheese due to the high cost of Gruyere and I can't imagine it could have been any better with the more expensive cheese.

    I am living in France now with my boyfriend and decided to try to make some French dishes. I made this and it was so easy and delicious! My boyfriend even said it was exactly like he has always eaten in France!

    This is one of my favorites from Ina. I adjust it a bit to reduce calories with lowfat milk, butter and I use whole wheat flour which gives it a great flavor. Sometimes I omit the cheese altogether and it's just as wonderful. A little Thyme added to the recipe also gives it great flavor. A wonderful dish on a cold winter's night.

    I made this as a side with almond lemon chicken and salad. Everyone at my dinner party loved it! Half of them went back for seconds for just the cauliflower.
