This is so good and tasty, yet feel as though you are doing something (at least a little, good for yourself. Yum, yum, yum

I used monterey jack cheese because I'm not a fan of gruyere and used half & half instead of milk (needed to use it up. Otherwise followed the rest of the directions as written. It was like mac 'n cheese only with cauliflower. Mmmmmmmm

This was ok, but I thought that the amount of nutmeg that was way too overpowering, and the roux doesn't really thicken the amount of milk that the recipe calls for...I make cream sauces and cheese sauces without a recipe all the time...I think that I will stick with my own from now on....

Tried this tonight w/ some leftover cauliflower from Tday and it was awesome. Vegi recipes are dicey and this was great. Both my hubby and I loved it so much I'd make it for company!

I like cauliflower in general, but now I love it using this recipe. Gruyere is so tangy, sharp and delicious, it just turns a veggie side into the star of the meal!

I made this last year for Thanksgiving and it was such a hit. Very simple and easy to make the night before.

The breadcrumbs gave it a nice crunchy wholesome texture and the gruyere made it nice and creamy - I added some dry mustard just to add a little kick. (about 1/2 tsp....The leftovers didn't last very long...

Although I love vegetables, cauliflower has previously been ranked in the bottom third of favorites. It has this gnarly appearance and usually tastes bland. With this brilliant recipe by Ina Garten, cauliflower comes to life and moves to the top five favorites in my kitchen. Easy to make and simply wonderful in flavor, while retaining a bit of crunchiness that is so satisfying. A real discovery! Thanks, Ina.

My niece and nephews LOVED this when I made it two years ago for Christmas dinner. It is now requested annually and has become a family tradition - Aunt Sue's Christmas cauliflower. Pretty good considering the kids hated cauliflower before I made this recipe; and it's the only way they will eat cauliflower to this day!
