This is a wonderful way to make cauliflower appetizing to people who normally won't touch it. I've made it several times but substitute other cheese I might have in the house for the Gruyere in combination. For example, swiss + provolone + romano is a nice combo, or provolone + edam + parmesan, etc. Next time I'm going to add some crispy bacon bits and I'm betting that will be wonderful.

This is great tasting! Everyone I make it for loves it too. I slightly brown the butter & flour to give it a richer nuttier flavor and add a little more gruyere.

Great recipe for everyday or special dinners. I've changed it up a bit using other hardy veggies (cauli, brocc, carrots comboand it works well. Just make a good cheese sauce. Yes I've cheated and used frozen veggie (thawed in a time pinch and it still impresses.

It's a great recipe. For those who say it's rich, I agree. We usually make it as a main dish -- no meat necessary for this meal -- and serve a side of lettuce greens with apples or mandarin oranges and a light vinagarette dressing. That's a perfect work day meal.

This was so good! I have never experience gruyere before and i was a bit worried when I opened the package. It has a very strong smell! But this dish was incredibly good. My whole family loved it-even my daughter. And the leftovers were even better!
