    I think Ina's recipies are excellent but not this one. I made it for Thanksgiving dinner and my guests did not eat it... I would be much better as a sauce to the meat but not the main side dish. Sorry!

    I made this for Thanksgiving. It received all rave reviews, except for one person who was neutral. As is often the case with Ina's recipes, I had to cut back on butter because of dietary restrictions, but this was flavorful and different...and fun to make. I have a food mill that has only one blade, and the mill could not process this concoction, so I had to use the processor. I made sure not to over process, and it was fine.

    this was a far cry from mashed potatoes or the awful sweet potatoes with
    marshmallows. i will definitely make it this year--thanks ina

    It was okay, but not great like I hoped. I think next time I would omit the apple cider and add chicken stock to balance out the flavors. I think that the apple alone imparts enough sweetness.

    Made this today for Thanksgiving try out. YUM! I didn't use all that butter, I softened my vegetables in a small amount of chicken broth w/ 1-2 T butter added. I had a little too much liquid but just cooked it down and added a few potato flakes to thicken. Added all to my Cuisinart and blended til smooth. It was very good and I liked better than my turnip-rutabaga mash as it is sweeter!!

    What a great introduction! First time to cook fennel and celery root. My husband, not always a vegetable fan, raved, and raved and raved. I followed the recipe exactly...why mess with perfection!

    I have made this several times for family holiday buffets, and if you don't act fast you won't get any! It's so popular that it's literally gone in minutes!
    I love love love the flavors and it's my favorite side dish ever.

    I made this the first time for Thanksgiving dinner. The leftovers were amazing. I added a little chicken stock for depth (the apples were on the sweet side.
    I think that's what I love the most, using the recipe for my own tastes. I love it.

    I made this for our Christmas dinner. After all the peeling and chopping was done, it came together very well and it was really delicious. We had to fight over the leftovers the next day. My only issue with this is that the celery root is expensive and the store had to special order it. Otherwise it's great for a special occasion. The reheated leftovers were just as good. Another delicious recipe from Ina!
