Ingredients

  • 2 sheets (1 box) frozen puff pastry (such as Pepperidge Farm), defrosted overnight in the refrigerator
  • Flour, for dusting
  • 1 extra-large egg
  • 1 tablespoon water
  • 1/2 cup freshly grated Parmesan
  • 1 cup finely grated Gruyère cheese
  • 1 teaspoon minced fresh thyme leaves
  • 1 teaspoon kosher salt
  • Freshly ground black pepper

Directions

Preheat the oven to 375 degrees F.

Roll out each sheet of puff pastry on a lightly floured board until it is 10- by 12-inches. Beat the egg with 1 tablespoon of water and brush the surface of the pastry. Sprinkle each sheet evenly with 1⁄4 cup of the Parmesan, 1⁄2 cup of the Gruyère, 1⁄2 teaspoon of the thyme, 1⁄2 teaspoon of the salt, and some pepper. With the rolling pin, lightly press the flavorings into the puff pastry. Cut each sheet crosswise with a floured knife or pizza wheel into 11 or 12 strips. Twist each strip and lay on baking sheets lined with parchment paper.

Bake for 10 to 15 minutes, or until lightly browned and puffed. Turn each straw and bake for another 2 minutes. Don't over bake or the cheese will burn. Cool and serve at room temperature.

    I had just moved into a gated golf community. I liked my neighborhood and decided to host a "Ladies Cup of Cheer Party" for... the women in my neighborhood in early December. I made several of Ina's recipes for that particular party but the cheese straws were the hit of the party. We are a very social community and if there is a party I have been told that I have to bring cheese straws. I have taught my dear neighbor who claims she cannot bake to make this recipe, my darling daughter-in-law and my dear friend in Dallas (over the telephone). I am totally lactose intolerant and cannot dare to eat a tiny bit of a cheese straw. I have to have my husband in the house to test if the cheese straws are done. It gives me such great pleasure to prepare an appetizer that my friends enjoy so much. I love watching Barefoot Contessa. Thank you Ina for helping me become a better home cook.     Made this recipe and took it to church for our annual Thanksgiving carry-in. Everyone RAVED about them and Ina got all the... credit!! I have created some more Barefoot Contessa fans......they are for sure going to start watching! I am a busy Grandma babysitting for the grands and they loved helping with this recipe.....had a great time and everyone loves these cheese straws.     I call these "Northern Cheese Straws" because they are so much better than the Southern ones I'm accustomed to. I dont twist... mine and I used more thyme than what was stated. Way to go Ina!Read more
