You can create up to five timers

Ingredients

  • 4 cups old-fashioned rolled oats
  • 2 cups sweetened, shredded coconut
  • 2 cups sliced almonds
  • 1 1/2 cups dried cherries, chopped
  • 1/2 cup vegetable oil
  • 1/3 cup good honey
  • 2 teaspoons ground cinnamon

Directions

Preheat the oven to 350 degrees F.

Toss the oats, coconut, almonds, and cherries together in a large bowl. Pour the vegetable oil and honey over the oat mixture. Add the cinnamon, and stir with a wooden spoon until all the oats and nuts are coated with the liquids. Pour onto a sheet pan. Bake, stirring occasionally with a spatula, until the mixture turns a nice, even golden brown, about 25 to 30 minutes.

Remove the granola from the oven and allow to cool, stirring occasionally. Store the cooled granola in an airtight container.

    I've made this several times a year from three years now, and my best friend insists I give her some each time. I follow the recipe, but stir frequently. Don't finely chop the fruit. I keep the cherries fairly large, and they haven't burned or gotten too hard. If I used a smaller fruit like cranberries, I wouldn't chop them.

    The ingredients are tasty but I think the cooking time is way off. In the first 10 minutes it started to get really brown but it was still too moist to take out of the oven. In the end I had it in for a longer time on a lower heat but I think the temperature and time is way off in this recipe.

    This recipe is excellent; I think that I prefer it with the additional cup of coconut. I also put in different kinds of dried fruit, such as apricots, dates, and cranberries. However, I never bake the fruit with the granola, as it does tend to overcook. Instead, I mix in the fruit at the very end, while the granola is still hot from the oven. The fruit has a chance to heat through and to meld flavors with the cooked granola, but it doesn't burn.
