Adsolutely delicous! Used recipe as more of a guideline than anything else. I did a lot of tweeking to get it to my desired taste. Used green bell peppers instead of red. added more garlic as well. Used boneless, skinless chicken breast instead of bone-in, skin on. Added cilantro instead of tyme and added kidney beans as well. No measuring here and it turned out fantastic! MMMM MMMM GOOOOOD!

This chili is so flavorable and wonderful for those dieting and those who just love good food. I've served this for company and they rave about it. And it looks pretty when served too. The chicken is moist- this is the way I cook all chicken breast now. No more rubbery, dry boneless breasts. Try it, it's easy.

I really love this dish! When you eat this, you are satisfied and don't really miss the regular chili version. I thought that it would be kind of boring, but it wasn't. I know that on the show she said that she didn't like cilantro so she was going to put basil in instead. I love cilantro, so I used a handful of that intead of the basil...it was great. I also happen to have big can of fire roasted tomoatos, so I put that in as one of my cans and just used the regular canned tomatoes for my 2nd can. That also added a little punch of flavor as well. My husband doesn't like peppers or onions, so I will have to see how he likes it, but I will definately cook it again.

I never do things like this but your chicken chili was incredible. My husband, grandson and myself thought it was the best one dish dinner that we have eaten in a long time. Thanks for the recipe, I will keep it forever and convey it to all of my family and friends.

I halved this recipe since I was only cooking for my husband and I, and used a rotisserie chicken to save time. The end result was delicious and this is a great lower fat alternative to regular beef chili.
