This meal was absolutely delicious! I modified the meal by cutting the ingredients in half since it's only my husband and myself. I also added black beans and added more spices as I went along for additional kick.
This is great and healthy meal! Great job Ina!

My husband and I love this recipe - it is delicious! There was plenty leftover for another meal and tasted just as great as the first time.

I am certain that this is a 5 star recipe if done exactly as it is. I have a very busy life and do not have time to cook meals that take more that 20 minutes. So I decided to use my Crockpot for this recipe, and it turned out fabulous!

I used thigh meat instead of breast meat, you don't need to add any oil when cooking in the Crockpot. I also added a can of white kidney beans (I will even add more next time. I didn't brown anything, I just threw it all in the pot, stirred it up and set it on low for 8 hours.

It was very very tasty, and healthy!! I had no guilt after eating this! My boyfriend was very pleased with it as well, and especially enjoyed it with the added sour cream on top.

When I first read the ingredients I wasn't sure but I needed something fast for dinner tonight so I gave it a try. What a great recipe! It was very easy to prep and the finished product came together beautifully. I bought a roasted chicken from the store and shredded that instead of roasting the breasts. I also took other's suggestions and I doubled the spices and added 1 cup of chicken broth as well as a can of black beans. I served it with Corn Bread and lots of shredded cheddar cheese, lime slices and sour cream! Definately a keeper! Delish!

I just made this yesterday and it was GREAT! Everyone asked for a second helping. It was spicy and flavorful- just perfect. Ina, you are a genius!

Loved this one! I did use cilantro and not basil (Ina doesn't like it but we do and a little more chili powder and chipotles instead of the cayenne and hot pepper seeds. Great with some sourdough bread. I can see a lot of changes being great with this too like adding some roasted green chilis or canned beans. As usual, love those Ina recipes!

This was really good. I did make a couple of changes: added some corn, made the pieces a little smaller than shown on the show, a little more cayenne powder, cilantro instead of basil, and added a little bit of chicken stock (the original looked a little too thick. This was delicious - grea comfort food on a cold rainy day.

This is so delicious and reminds you why cooking is so worthwhile and fun (as I don't get a chance to cook as often I would like. It does take some time to chop things up and to roast the chicken and take it off the bones but I think it was ABSOLUTELY worth the time and effort. I added 1 extra tsp of chili powder, 2 yellow carrots and 2 orange carrots and a can of cannellini beans-SO worth every minute and makes plenty for leftovers or to freeze. Perfect amount of spice and delicious with sour cream. FABULOUS!
