Love this recipe!! I was a bit skeptical at first but it turned out to be delicious. I made it for my parents and they loved it. My mother thought adding some white beans would be nice. I like it as is : Thanks Ina!

I made two versions of this tonight - one with tofu and white beans, and one with rotisserie chicken and white beans. It was delicious! My meat loving family members really liked it. The rotisserie chicken made it really easy. I doubled all of the spices and added lots of chopped cilantro.

Although it was more of a soup than a chili, it was delicous. I made it for a work funciton and recieved rave reviews. People started calling it a veggie chicken chilli. They couldn't believe how easy it was to make.

I love this chili and have made it several times, the first time of the season yesterday (starting to get colder here in Chicago. I like it spicy, so I double the cumin and almost triple the heat: chili powder (I use chipotle chili powder, cayenne pepper and red pepper flakes. It's just right, not too hot for those who like a little kick. I also mince up a couple chipotle peppers in adobo and throw them in when I add the garlic. Also add some extra strength (less water than called for "Better than Bullion" chicken base/paste to give it a little more richness as well as liquid. Oh, and I use cilantro instead of basil as that seems more fitting with southwest cuisine. I've noticed a lot of people just don't like cilantro like Ina and recently read somewhere that it may be due to a genetic code that makes this herb taste bad. Glad I'm not one of them. This is more of a stew than a chili. Ina's recipes never disappoint.

I tripled the called for cumin and chili powder and added two teaspoons of unsweetened cocoa powder and one teaspoon of cinnamon. The flavor and the aroma were just absolutely wonderful! My husband and I each had two big bowls of it and still could not stop eating!! While I liked the combination of all the ingredient and spices in this recipe, I could definitely see it being too bland if I had not tripled the spices though.

I made this for a large gathering this past winter and it was very good, it makes more than the recipe says it makes, I added a bit more on the spice side but like other reviewers I didn't have a problem with it not having beans as I'm not a bean lover, so this worked for me! Everyone loved and and provided a good comfort food for us all!

I made this for my husband and I, and I did modify the recipe a little. I put zucchini, doubled the spices except the salt, and I let it simmer a lot longer than it called for, which made it even more thick and flavorful. My husband is a beef lover and even he loved it just as much as regular chili! I will be keeping this recipe for sure!
