I cheated, I bought a rotisserie chicken at the grocery store and used the breasts off that...and I added no salt because I think 2 tsp of salt is excessive and the rotisserie chicken is already seasoned.
I also reduced the amount of mayo. I used 1/4 c of mayo which I thought was sufficient for 2 breasts. I only had to lightly spread the sandwiches with more mayo.
I also added about 1 tsp. of mustard to heighten flavor and 2 sprigs of green onions.
I also added a lot more tarragon because the bunch I got didn't seem as strongly flavored as usual...
Okay, so I basically doctored Ina's recipe to suit my palate but, her recipe was fantastic and my sandwich was delish!

Made this right after seeing the show. SO TASTY! I usually think chicken salad is... well... bland. Just adding the tarragon really upped the flavor ante. Served this with baby spinach on nutty bread. I will definitely make this again! Hubby loved it too. :

Less is definitely more in this recipe! Not too many ingredients and so easy to make. This is simple and delicious. I was hesitant to try when I did because I only had boneless skinless breasts on hand, but I used them anyway, and it still turned out perfectly. The chicken was SUPER moist. I can't imagine it tasting EVEN BETTER when I try it with skin on chicken. I personally don't care for tarragon, so I left it out. Still amazing. Thanks Ina!

Roasting the chicken was an excellent tip. I have always boiled the chicken and didn't realize the difference the roasted chicken flavor makes in chicken salad! The tarragon was a delightful addition and...I tried using the 7 grain bread and this made a tasty difference as well. Had two friends over for lunch and we southern gals voted you and this recipe as superior! Thanks, Ina, for a great back to basics recipe!

This is a lovely, simple way to make chicken salad and the tarragon adds wonderful flavor. I do not get the previous review...she added italian dressing to chicken salad...??? Why did she even make this recipe if she does not care for chicken, celery, mayo and, obviously, tarragon?! Thanks, again, Ina for tasty, "back to basics" recipes.

.......so she added terragon. That is certainly not enough to give more taste to chicken salad. I was very disappointed and finally added some Italian salad dressing just to get SOME flavor. I shudder to think what the original chcken salad tasted like.

I'm really picky about chicken salad and this is not only the tasiest, it's the easiest too. I put a little more tarragon than called for and added pecans. Delicious!!!

I saw Ina make this on a rerun yesterday and thought I'd give it a try. Most times, chicken salad takes more like mayo than anything else. This recipe doesn't take like that to me. I did add about 1/2 tsp of celery salt and 1 1/2 tsp of regular salt to give an extra kick.
