This is a really good chicken salad recipe. I added some chopped toasted pecans to the recipe and instead of mayo, I used half mayo and half fat free yogurt. It was really good.

The best chicken salad recipe!!! Sometimes i roast chicken breasts when i don't have any bone-in chicken on hand and add a little dijon mustard & it turns out great! I never use the tarragon bc my boyfriend & I arent fans, but i think it turns out great even without it! I make it at least a couple times a week. =]

Fantastic! Creamy, crunchy, scrumptious! As with tomato and basil, chicken and tarragon are lovers!! Make sure to use REAL mayo, none of that diet garbage here. Our family prefers dark meat on a roasted bird so I used this recipe a lot for the left over breast. :

Yum, yum, yum. I loved it! The fresh roasted chicken, the tarragon and the ingredients came together to make something fresh tasting and delicious.
BUT I can definitely understand why some people wouldn't like this dish though. The tarragon is a really strong licorice-y flavor. If you don't like the bold flavor of tarragon, this recipe will not fly with you. I made it for my mother and she thought it was just okay. She ate it, but she didn't love it like I did. She would probably give it two and a half stars.
If you are making this for other people, especially a larger group, I might stick with a chicken salad recipe that's more traditional. This one is a little bit risky. You might get some haters with this chicken salad.

I made this the first time exactly as the recipe directed. It was amazing. Second time I added grapes and walnuts to make it a little more like the way my Mum made chicken salad growing up. It was even better. Excellent recipe that I keep coming back to, especially in the summer!

For the person who asked what is mesclun is, it's a variety or mixture of young lettuces and sometimes it has other edible leaves included in the mix. So just get your favorite salad mix at the grocery store. I personally just used bibb lettuce because that's what I had and trust me that worked out just fine.
Now back to the recipe. I usually love love all of Ina's recipes. Some people think that she uses too much salt but that's because they don't realize she uses only kosher salt which would mean if you are using table salt your dish would be twice as salty. However, I still felt like this chicken salad was missing something. I added a little sour cream and pickle relish and that seemed to help to me add some flavor. I think this is probaby a good base to add to.
