This is the easiest and most delicious chicken salad I have ever made! For me, the addition of tarragon was the perfect "secret" ingredient.

I love chicken salad but wanted something different. This is the first time I used tarragon in a recipe. I was a hit! I don't think I will ever have chicken salad without it!

Made these a while back and just now registered to review.
These were a total hit!! I agree the tarragon adds a neat new dimension of flavor, and a couple ppl were totally intrigued about 'what' the secret ingredient was that gave a new flavor...everyone enjoyed these and there was nary a spoonful left!! :D Defintely a keeper!! Thanks, Ina!! :D

I wasn't a fan of the tarragon and when I added less than a teaspoon of the required amount of salt needed it was way too salty! I added pepper to try and balance it out.. but it didn't work out.. I'm not sure if I didn't add enough mayonnaise but this recipe wasn't a hit with me. I love your recipes Ina but this one just didn't make it on my list...

Ina--I used this as the base, saw a show where you had a taste test with various versions, and remember the chicken salad with tarragon won out. I however used rotisserie chicken and turkey--and sour cream as well as good mayo...and added dried cranberries, and green grapes, and the celery and a small vidalia onion and cashews on top. The fresh tarragon was from my garden. I like the varied texture....but mine is more of a salad than a sandwich stuffing.....
So it might not have been this recipe--but this was the inspiration. My salad was great....made enough for all week.

Usually i love Ina's recipes, but this one fell short for me. I felt just mayo and tarragon was not enough to flavor the chicken salad.
