    One of the best chicken recipes I have ever had! I even used that squeeze bottle of basil you find in the refrigerated section in the produce aisle as I was out of fresh basil leaves. I have made this with fresh basil and was so good. I did use a bit more goat cheese then it called for and I also used boneless skinless chicken breast and just cut a slit in the side.

    My family loved this recipe. I did add herbed sun dried tomatoes in oil along with the goat cheese and fresh basil. It was a challenge finding chicken breasts on the ribs with enough skin to cover the fillings. I didn't quite succeed with that.

    I love this receipe! It is simple but so good that I have served for guests several times. One thing - hard to get bone in chicken breasts with skin in our area. Ina also has another version with Sundried tomatoes and it is even better!!

    This is a fabulous, easy recipe. I've also combined it with a spicy cajun goat cheese recipe that I serve with crackers, and it turned out great: omit the basil. sauté a small finely diced red pepper and small diced onion in little bit of olive oil and mix into the goat cheese along with cajun seasoning to taste. sprinkle a bit of the seasoning on top of the stuffed chicken breast before cooking. A spicy twist to this dish that really works!

    This was wonderful and easy. I used more goat cheese than the recipe calls for and was glad I did. We had larger chicken breasts so I cooked them for an hour. They were perfectly done and the skin was slightly crispy...mmm. My husband loved it and wants to have it again soon. Think this would be a great meal for company...just throw it in the oven and don't have to worry about it.

    Made for small dinner party... used thighs instead of breasts. EXCELLENT! Everyone loved it. Super simple - put it into oven when guests arrived, had some wine on the patio, pulled it out and voila, yummy, easy, elegant meal. So easy it's going on the regular rotation in this house! Ina's recipes are ALWAYS the best. Thank you! Oh, served with asparagus and rice pilaf, yummy.

    I make this one very often - my 6 and 11 year old sons LOVE it! The basil adds great flavor, and you can use really any type of flavored (or not goat cheese. And it's SO easy for something that looks so elegant. I also make it using chicken leg quarters - it's a great way to fancy up cheap chicken cuts!
