    The chicken is succulent and tender and very flavourful. The mushrooms are delicious and have such an earthy, yet complex flavour. It is worth every penny of buget and time. I recommended this recipe to a friend who was having an upscale dinner party and the results were raved about for a week.

    I am not a real fan of morels so I substituted a combination of fresh exotic mushrooms. I also substituted sour cream for the creme fraiche and sherry for the Mateira wine. It was an exceptional dish, even with those substitutes.

    This was wonderful! the chicken stayed moist and delicious! The morells cost more than I expected but it was worth it! Great recipe,Ina!

    This is incredible. One poster suggested soaking the morels in the madiera which is a good idea. Otherwise, deglaze with the soaking liquid, reduce till amost gone, then add the maderia. Awesome!
