I rarely give 5 stars, but this is worth it! Very flavorful and healthy! Now the crazy part....my 6 year old loves it! No joke. Give this one a try.

I grew up next door to a lebanese family. Their daughter and I were best friends. My family is Italian american. As kids we would decide whose Mom and Dad was making the best dinner and then get ourselves invited for dinner. Whoa, I would give anything for those dinner options again. That was over forty-five years ago and our parents are no longer here. They gave us both the blessing of appreciation of our cultures and differences, as well as a love of fine, fresh food. How lucky were we! I never got the Tabbouleh recipe so when I got Ina's book, Parties, I couldn't wait to try it and have been making ever since. When I told my friend I was making it with cucumbers she was surprised and said they didn't use them in theirs. Then she asked "I hope you use allspice in it." AHA that was the missing flavor, a pinch of allspice. So to all of you looking to capture a true middle eastern taste try the allspice.
Note to anonymous (9-8-08: WHAT - NO MINT? Why bother at all.

I made this dish for a potluck at work, and living here in the deep south, most of my co-worker's had never heard of bulgur wheat, let alone taboulleh. It was a hit! I was glad to share the recipe with them.

It boggles my mind that people adapt recipes so significantly and then complain that they don't like the results. Of course you don't, maybe you should have followed instructions!!
I think this dish is a perfect healthy, summery main dish. I often make a batch on the weekend and take it with me to eat at work for lunch the next week. The only suggestion I would have it so to reduce the salt slightly, as Ina tends to go overboard with salt in her recipes. And definitely don't skimp on the fresh herbs!

I love Ina and have all her cookbooks! However, I have to say this is the first of her recipes I did not care for. To be fair, I did omit the mint since I do not like mint in a savory dish. It was bland. After it was done, I added some crumbled feta to the top of my individual dish. That helped. Will not make again.

Letting the bulgur soak up the lemon juice is a wonderful way to make tabbouleh. My Middle Eastern husband gave this dish an enthusiastic thumbs up.
Lovely summer meal.

My husband and I both just didnt like this recipe much at all. We had never had tabbouleh before anyway so maybe it was just not what we were expecting. The mint was really overpowering and maybe if we try it again we will use less of the herb. It just tasted a little 'grassy'. But we both still LOVE her cooking!

My husband isn't a big fan on mint so I used basil and it turned out great. I also used leftover grilled chicken. Can't wait to make it again.

I prepared this for my family reunion this summer and had multiple requests for the recipe. It's a nice change from mayo-laden summer salads.
I made it with the chicken broth rather than the water. Great!
