I came upon this recipe when trying to make a chicken salad for a friend that did not like mayonnaise. She loved it as did everyone else that day. I just served it to our pastoral staff for lunch as our senior pastor loves peanut butter and once again it was a huge hit.

I wish I had read the reviews before making this because 1. It is very intense in flavor. and 2. It does not keep well overnight (esp. the asparagus.(I used small asparagus I also felt the 20 min prep time was way off, as it took me almost that long just to de-skin and shred 4 chicken breasts. My sesame oil had gone ransid, so ran to Fresh Market for some more and they don't carry it. Neither does Harris Teeter. Total frustration. Returned home and used the toasted sesame oil I already had on hand. This may have intensified the overall flavor. I watch Ina all the time, but have never made anything of hers before this and was somewhat disappointed. It was good but I felt it sounded much better that it turned out. Esp. for as long as it took to make it. I have a feeling the people who say it was easy, did not roast their own chicken and perhaps cut up the chicken instead of shredding it. I also don't see how you can snack on it all week as it becomes soupy overnight.

This recipe is amazing! I added snow peas instead of the asparagus, it was great!

This salad was amazing. I used a store-bought rotisserie chicken and added lettuce.

I love the dressing....like everyone mentioned, too much salt. I added chinese noodles that you can get in the refrigerated aisle at the grocery store along with some shredded cabbage. It made it more substantial! Delicious!!
