I made these at Christmas time, and husband took them to work, everyone commented on how good they were. I adore Ina, she has some of the best recipes!!!

I too experienced the "runny" truffles using this particular recipe. After some trial and error I've found that a 12 oz bag of Ghiardelli chocolate chips and 1/2 cup heavy cream works best. Also, instead of using "prepared coffee" which only adds more liquid, I use instant coffee crystals. Finally, I love these dipped in more chocolate so after I've rolled them out I put them in the freezer for about 1/2 hour and then quickly dip them in melted dark chocolate (inside used sweeter milk chocolate. Very yummy! Even my chocoholic friend approved!

First of all, it tasted fantastic. Easy to prepare and fast, especially
when some friends come to visit unexpectedly! Ina Garten is a food Icon.Allthe recipes that I have are from her show. As they say in Hawaii when the food is great, "SHAKA INA"

I made two recipes of these to serve at a dessert reception. The first I made exactly by the recipe. The second I used part milk chocolate. Both were "to die for". I made them on a hot humid southern summer day so I refrigerated them for about 2 hours before I formed the balls. I also rolled some of them in toasted finely chopped walnuts in addition to cocoa powder and powdered sugar.

I love the combination of the darker chocolate with semi-sweet. However I did not really care for the coating in cocoa. This made them have a very bitter first bite. I think when I make these again (and I probably will I will use a combination of powdered sugar and cocoa just so the bitterness is not so strong in the beginning. Or maybe coat them in nuts or something. But this is a great basic recipe. love your show Ina!

I have tried this recipe numerous times and I have to say the set time of the prepared ingredients is INCORRECT.
I love Ina Garten, but man, after the chocolate mixture is prepared you best not follow what is posted. They will tasted great, but no one wants a messy blob of decadent chocolate to deal with!!
