These were so good and easy! i mixed half of the chocolate mixture with mint extract and topped them with cocoa powder and the other half i used almond extract and topped with hazelnuts!

I was so excited to make these to give as Valentine gifts, but the experience was a nightmare! After following the recipe exactly, forming the truffles was very difficult. The chocolate was not solid enough after 1 hour at room temperature. I ended up refrigerating it for 2 hours. The melon baller dipped in hot water would not release the chocolate onto the baking sheet. I ended up using 2 teaspoons and dropping the truffle directly into the cocoa. Then, with cocoa covered palms, formed a ball and rolled it in cocoa. I had to keep coating the palms of my hands with cocoa. It was a huge mess! This recipe needs some revision.

I made 280 of these for a wedding last spring. They are so easy and so delicious. The only problem I have is that the humidity is higher where I live, so the truffles tend to soak up the cocoa powder fairly quickly. My solution was to make a coating out of the same chocolate with a little bit of paraffin wax and dip them. They look beautiful done this way.

When working with the chocolate keep dusting your hands with icing sugar and your sticking problems go away. Instead of a melon baller I use a small icecream scoop with the spring handle (the old fashioned kind. You can pick them up at kitchen gadget stores. Works great and they all turn out the same size.

This is one recipe that can be easily personalized to create a variety of truffle options. I have rolled these is finely chopped walnuts, sweetened coconut, chopped peanuts or dipped in white chocolate. They never fail to impress when people find out you made them yourself & they make an elegant gift.

Very frustrating. I planned to make these for a bridal shower. I bought all the ingredients, followed the recipe exactly, as it's not too difficult and the chocolate did not firm up enough to spoon into balls in the 1 hour stated in the recipe. I let it sit at room temperature for almost 3 hours and still ended up refrigerating it. After another hour in the fridge it firmed up enough to spoon and decorate. I'm disappointed and glad I gave myself an extra day in case things went awry.

These truffles are great and EASY! I use chips instead of using blocks of chocolate, and If the chips are big, then chop them a little for a smooth consistency.
