The recipe is amazing!! I modified the chocolate 1/3 bittersweet to 2/3 semi as well. I rolled them in toasted hazelnuts. They were incredible!!

I tried this and it did not set however I added crushed biscuits to it turned them in to balls and there you have it an amazingly tasty sweet. My guests thanked Ina for the wonderful recipe. Well done.

I found these truffles horrible, I let them stand for 4hrs it did not firm up properly. I put them in the refrigerator for 2hrs they firmed up slightly, but not enough to roll. I put them in the freezer till the next day. Still after a few mins.,they were soft and messy again. The coating never set properly, because the truffle was so soft and moist it just continued to make the confectioner sugar wet and gunky. Will make again but I will reduce the amount of liquid in it and adjust the amount of bitter chocolate in it to less of both. Nonetheless, thanks Ina, I like new recipes and challenges.

I made these for a party and they were a hit. I used several different coatings (confectioner's sugar, cocoa powder (Dutch processed, chopped almonds, and melted chocolate to make a few types of truffles. I like this easy way of making a ganache.
I agree with another reviewer that the original recipe produces a fairly bitter and dark truffle. I modified the ratio of bittersweet to semisweet chocolate to increase the sweetness a bit (1/3 bitter to 2/3 semi.
I didn't have any problems with the ganache firming up. It will be a semi-solid and the balls are easier to work with if they've been chilled.

I tried to make these 2 times, and both tries were just a waste of money and time! Horrible recipe! The chocolate NEVER set for me, I even left it in the fridge overnight. Sorry, but I would not recommend these.

We loved them...they took a lot longer to firm up than what the recipe said, but well worth the wait! I found it easier to wait the one hour then, I used a small ice cream scoop, placed the "scoop" onto parchment paper and placed them into the fridge to let them continue firming up. About 1/2 hr. later I coted them with my toppings (e.g. nuts, coconut.
We will definetly make these again!

This was far too dark and bitter for my taste- and usually I like dark. Yuck.
Also, I did have the problem that it didn't firm up until it spent several hours in the fridge.
