    These are so moist, low sugar, and when I substituted white/whole wheat flour and they kept their wonderful texture. Bet they would be great with carrots in place of bananas, as well.

    I really liked this recipe. Nice and moist, the amount of orange zest and molasses is perfect. My husband isn't a fan of bran muffins, but he even liked them a lot. Very good!

    I decided to make the Chunky Banana Bran Muffins, and they were amazing!!! My husband is not such a big fan of raisins, so I went easy on the raisins and added some cranberries, and also some almond extract...and they really were just incredible! I love ALL of Ina's recipes!

    These muffins turned out nicely, dense and moist. Although you might be blown away by the color and smell from the molasses, don't worry - you can taste it but it isn't overwhelming. I wouldn't alter the amounts on the zest, raisins, banans and nuts - these give it the needed texture and sweetness. They aren't terribly sweet, but I would hesitate to add more sugar. Overall, a good healthy alternative to fat and calorie-laden muffins.

    I really liked the chunks of banana. I had to use pecans b/c I was out of walnuts and that was OK. I liked the molasses too, they were not real sweet. I will make again.
