It went all wrong here. First off, I peeked at it at the 39 min. mark and saw it was brown. Oops, checked it, sure 'nuf, it was done and I have no idea how long that was the case. 45-55 min. would have turned it into a brick. Next thing, the frosting. Made it exactly as directed but there was WAAAAY too much. Wound up throwing about 1/2 of it away. Finally got to taste it and found it dense and heavy and DRY, DRY, DRY. Wow... What a waste of the enormous amount of time it took not to mention the $$$ involoved. Will wind up throwing the rest of it away. What a shame. I made it for my birthday, too...

absolutely HEAVENLY! I too used coconut extract instead of the almond mainly because I didn't have any, but next time I'll use the almond for the cake and coconut extract for the icing. I think the combo would be wonderful. I know a lot of people thought there was too much icing but I think this dense, thick cake needs it. I took the advice of others and halved the icing recipe and though everyone loved it I think it would have been "over-the-top" had there been more to give the denseness some "ummph". I also took the advice of others and split it up in 3 pans instead of two and so glad I did because it would have run over. I think it depends on how big your pans are but having that third cake gave my little ones who don't like coconut or icing as much as us adults a chance to enjoy the cake plain. If you are looking for a light airy cake this isn't for you. The plain cake is almost like a pound cake. THANK YOU FOR SHARING.

My family really enjoyed this cake!! I used coconut extract instead of the almond extract. This cake was very moist and delicious. I would recommend this recipe to anyone who loves coconut cake. Keep up the good work Ina!!! S. Driver

This coconut cake is absolutely wonderful! It really hits the spot and makes such a beautiful presentation. In my opinion this was incredibly easy to make -- it took me hardly any time at all. The icing was also very easy -- much easier than the 7 minute frosting that some coconut cake recipes call for. I did use coconut milk instead of regular milk because I love it -- it's so creamy and delicious. Even people who are not cake lovers will go crazy for this -- I also loved Ina's "beachy" menu and this cake just tops everything off -- Ina hits this one out of the park! I love it and I think you will too!

TOTALLY worth the time it takes to prep and bake!! YUM-O!
I also used coconut extract instead of the almond. Would definitely make cupcakes with this for portion control!
