    Loved these cupcakes, but the recipe says 18. This recipe easily made twice that many. Why am I so off? Half the batter and icing would easily do

    The BEST cupcakes I've ever made or eaten! Everyone loved them! The combination of the cupcake and the icing is SUPERB!
    I added the coconut into the icing instead of on top so they would last several days and it was wonderful!
    When serving I added a little coconut on top and it was fantastic!
    I also froze 6 cupcakes. I defrosted them and they were as wonderful as the first day! These will become a regular
    dessert. THANK YOU!

    I made these cupcakes for a party and everyone loved them! They were very pretty and had a wonderful flavor, not overly sweet. I mixed some of the coconut into the icing and put the rest on top for a fluffy look. The recipe was easy to follow, the cook time right and size was fine - I got 24 using regular sized cupcake tins. I did find they improved, if that is possible with age. They were better the next day after being kept in the refrigerator. I always have luck with Barefoot Contessa.

    I seen this recipe in a magazine while I was in the dentist office a few weeks back. The picture looked so tempting I had to make it. I made it as a snack for family members and they had many positive comments. I was even surprised when one family member tried to say she made them. This I will make again.

    The Contessa really knows what to do with butter and cream cheese! These cupcakes are a huge hit everytime I make them. I made mini cupcakes for a party one day and had enough batter left to make a loaf cake and it too, turned out great. Love that Contessa.
