this was pretty good, but not as good as her banana crunch muffins and blueberry coffee cupcakes. probably won't make it again but for coconut lovers, enjoy!

I thought these would be great. They looked so yummy on the show that I went out to by ingredients immediately. Unfortunately mine came out flat and overflowing. I wonder what I did wrong? Was I supposed to use cake flour,as opposed to all purpose? Though they weren't pretty, my husbandloved them!

Very easy to follow. I halfed the measurements of the batter since I needed only 12 cupcakes. It came out great. A bit sweet so next time I will use less sugar. Also at 325 my oven didnt really brown the tops that well so maybe next time I try it at 350 degrees for 25 minutes.

These are a hit whenever I make them. I find that substituting 3 1/4 + 2 Tbsp. cake flour for the all-purpose flour makes the texture of the cake lighter and more tender. I entered these in our county fair last year and won a blue ribbon! Ina's recipes are wonderful!

Loved these cupcakes, but the recipe says 18. This recipe easily made twice that many. Why am I so off? Half the batter and icing would easily do

The BEST cupcakes I've ever made or eaten! Everyone loved them! The combination of the cupcake and the icing is SUPERB!
I added the coconut into the icing instead of on top so they would last several days and it was wonderful!
When serving I added a little coconut on top and it was fantastic!
I also froze 6 cupcakes. I defrosted them and they were as wonderful as the first day! These will become a regular
dessert. THANK YOU!

I made these cupcakes for a party and everyone loved them! They were very pretty and had a wonderful flavor, not overly sweet. I mixed some of the coconut into the icing and put the rest on top for a fluffy look. The recipe was easy to follow, the cook time right and size was fine - I got 24 using regular sized cupcake tins. I did find they improved, if that is possible with age. They were better the next day after being kept in the refrigerator. I always have luck with Barefoot Contessa.
