YUM!!! Made these for my husband's 29th birthday. Batter recipe made 33 cupcakes. I filled them 3/4 of the way full like I always do and they turned out perfectly!! Baked 17-18 min.- keep a close eye on these as not to over bake. I only made 1/2 the frosting and used 2 cups confectioner's sugar for half the frosting recipe (a little less than 3/4 of a pound. Will definitely make these again and again!!!

Love these cupcakes! Made them for a bridal shower and everyone just loved them. Very, very light. The icing is just the best! Followed the recipe. The key is beat the butter and sugar until very light. Will definitely make again.

These cupcakes were a hit. I did them for Easter Sunday, I colored the coconut in summer colors. All my family enjoy them.

These cupcakes were delicious, however, I was not fond of the flavor that the almond extract gave. I would definitely make these again, but I would either lessen the amount of almond extract in the batter and icing or just eliminate it all together.

These were the best cupcakes i've ever made! I think the key to making it light and fluffy is to mix the butter and sugar really well, and have it fluffy, and once i started adding the flour mixture, i tried not to overmix it, just enough to have everything blended well. This was hit, i think i got about 32 cupcakes out of this recipe. Thanks Ina,!

I made these for my husband's birthday and he LOVED them. The real surprise was that my in-laws showed up (whom I loathe, by the way... and they loathe me equally and my father in-law said that he loved them and all he could do was talk about how great they were. Now you need to know that this man is terribly mean. He's NEVER given me a compliment before so this was kind of a shocker. Thanks to the cupcakes, he was nice for once! Try these, miracles happen!

I'm planning on making this recipe for a very important charity event, but I'm confused as to what the correct amount of butter is. The recipe calls for 3 sticks of butter for the cake and then 3 additional sticks of butter for the frosting. There have been some comments that other versions of this same recipe called for only 1 1/2 sticks each (for cake and frosting. Could someone clarify this for me? Thanks!

I am so confused about this recipe. It was my bday today and I made them exactly and wondered the entire time about the butter and consistency. This recipe says 3/4 pound butter but after seeing this recipe on a different site I realize that is too much butter. I agree with the reviewer below that it should be 3/4 cup ( 1.5 sticks. The cupcakes came out like drop biscuits and very oily. I consider myself a great cook and bake all the time. Did everyone else really use 3/4 pound butter for the batter and then the same for the icing?? Or did you use 3/4 pound total? It was a waste of time and money:(
