Ingredients

  • 14 ounces sweetened shredded coconut
  • 14 ounces sweetened condensed milk
  • 1 teaspoon pure vanilla extract
  • 2 extra-large egg whites at room temperature
  • 1/4 teaspoon kosher salt

Directions

Preheat the oven to 325 degrees F.

Combine the coconut, condensed milk, and vanilla in a large bowl. Whip the egg whites and salt on high speed in the bowl of an electric mixer fitted with the whisk attachment until they make medium-firm peaks. Carefully fold the egg whites into the coconut mixture.

Drop the batter onto sheet pans lined with parchment paper using either a 1 3/4-inch diameter ice cream scoop, or 2 teaspoons. Bake for 25 to 30 minutes, until golden brown. Cool and serve.

    Finely Shredded Coconut

    I tried these once and they did come out REALLY runny, even though I followed the directions EXACTLY. The next time I made... them I used very finely shredded coconut and they came out PERFECT. Don't use the larger, almost grated looking coconut. The smaller and finer the coconut, the better. These are a huge hit every time now!Read more

    These are the best treat and easiest to make. Love only 5 ingredients! I take them to every party and they are gone... before everything else. For those who think they are too runny (which happened to one of my friends) -you have to make sure eggs medium to firm egg whites before you mix them in - don't over whip. Be soft when folding them in - if you mix too hard they will be runny. Lastly the temperature of the day counts - don't do it on a day with rain. Make sure to put on parchment paper or it won't go well. If it doesn't work the first time - try again. It is not the recipe - Sorry to say it is you. I've been making them for 2 1/2 years now and only flopped once. Read more

    Second time I tried them and the same thing happened. I could tell before I even put them on the sheet that they would be too... runny, did the same thing as others and added more coconut but it just didn't work - very frustrating! I've never had problems with my egg whites before the only thing I could try is to make them stiffer. Any other suggestions welcome!Read more

    Thank you so much for this recipe. It's a hit at my job. i have even tried a vary of extracts to give each a different... flavor. In one I added almonds with the almond extract. They were great. I only have one problem. How do you get the parchment paper to fit correctly and stay so flat. I wish they would come up with precut paper too mfit your cookie tray. LOLRead more

    I like to beat the egg whites until fluffy so they don't run so much when baking, otherwise these have been popular every... time I have taken them to parties. I also like to drizzle some of them with melted dark chocolate. You could also dip the bottoms in chocolate too.Read more
