This is hands down the best pot roast recipe EVER!..My company was practically licking the plate. Make sure you follow instructions and lower your oven after an hour. That is the trick that needs to be done to make your meat super tender..falling apart. I can't beleive some reviewers said lacked flavor..for me it was the most flavorful gravy. Ina is the best..I have never had a bad experience making her recipes.

my husband was not crazy about the idea of me making "pot roast" but I was craving it, after searching recipes, I made this one, even he had to admit, this was pretty tasty! I ran out of time to make the "sauce" and it was still delicious, I have to agree every recipe I have tried of Ina's works out great!

Delicious. Do not change a thing in this recipe. I had a five pound roast and there was plenty of sauce left over but no beef. A sure keeper.

Most delectable pot roast EVER! Served it for a family dinner, and my son-in-law said it was the best pot roast he'd ever tasted in his life. Followed Ina's instructions exactly. Who am I to improve on perfection? Pureeing half the vegetables and sauce gives it such a wonderful texture and depth of flavor.

Made it last night for the first time. Not too labor or time intensive. Just thinking about the sauce makes my mouth water. Glad there is plenty left over for tonight's dinner. One of Ina's best recipes! Served with mashed potatoes. Tonight will try it with either pasta or egg noodles.
